The history of Bunnahabhain Cèobanach, pronounced "Kyaw-bin-och" and meaning "smoky fog" in Scottish Gaelic, started with a dream of Ian MacMillan, the master distiller of Bunnahabhain. He wanted to reflect the origins of Bunnahabhain. He was inspired by life on the island of Islay in the 1800s, when the whole population was dependent on peat, a time when the smoke from open fireplaces mingled with the salty sea air to create a kind of "smoky fog". At the turn of the third millennium, when allthesesmells disappeared from the streets, Ian decided to return to his Bunnahabhain roots and began producing an intensely peaty whisky. Oak aromas are dominant on the nose, counterbalanced by a saltyconsonance. On the palate, the fullness and thesweetnessof the malt are followed by cask notes of bourbon with a slightly vanilla flavour. The production of this single malt whisky is fascinating.
